Course Meeting Day & Time: First Session - Wednesday, October 25, 2023 @ 6:00 PM
We will meet once weekly for five (5) weeks beginning October 25, 2023. Each session will be1.5-2 hours induration and will include both classroom and laboratory components. Depending on interest and availability, an additional class session may be scheduled to explore a few mushroom recipes. Mushroom risotto, Yum!
Course Description and Objectives
This course is designed to provide an introductory-level, hands-on approach to the art and science of gourmet and medicinal mushroom cultivation. The objective of the class is simple: make it easy and fun to start learning about and growing mushrooms. Students will learn about and cultivate a selection of gourmet and medicinal mushrooms.
Course Topics
· Mycology 101 – Lifecycle, spores, mycelium, fruit
· Mushroom benefits
· Different physical areas needed: prep, lab, incubation, fruiting, storage
· Making/using spore prints
· Making/using liquid spore syringes
· Making/using/expanding liquid cultures
· Lab cleanliness - aseptic, pasteurization and sterile procedures and techniques
· Mushroom substrates – comparison, selection, preparation
· PFTek
· Making/using mushroom spawn
· Mushroom cultivation environmental conditions and considerations
· Biological efficiency
· Field capacity
· Mushroom cultivation – Choosing which varieties to grow.
· Mushroom inoculation methods and procedures
· Mushroom Incubation/Colonization methods and procedures
· Mushroom Fruiting methods and procedures
· Water canning baths v. Pressure cookers v. Autoclaves
· Medicinal Mushroom considerations
· Sources for cultivation supplies and knowledge
· Intro to advanced mycology – what lies ahead for

Supplemental Course Materials (SCM)
To get the most out of this class it is recommended that students have the following Supplemental Course Materials (SCM). The course will be taught as though students have access to most or all the suggested supplemental materials, preferably by week 2.
I believe learning is enhanced when it is active and participatory. Students will learn exponentially better if they can practice what they are taught. It is important, however, to state that it is unnecessary to have all or any of the items below to derive benefit from the class. The SCM’s simply ensure that you have everything you need for success. Also, I purchase these supplies in large quantities and can pass these savings onto you.
Students may purchase any or all the materials listed below at their own convenience and expense. 2. SAB Supplies (70% iso, sprayer, gloves, masks, sterile syringes, sterile 18g 1.5-in hypodermic needles, alcohol lamp or butane/propane torch, etc.)

5. Mason Jars (quart (12) and pint (12) with modified lids (injection port and 0.3 micron FAE filters)).
